Unconventional? Maybe. Delicious? Definitely!
I think I may have found the ultimate sandwich recipe. Cheese…Bacon….Peaches….Yes, please!
This is from Panini Happy, an awesome Panini-only blog that I just love! Peaches are a great summer food, and I think their tangy, sweet flavor would balance out the salty bacon and rich cheese really well. I can’t wait to try this! What about you? Are you a fruit on sandwiches person or not?
Peaches & Bacon Panini Serves 2
Ingredients:
1-2 large yellow peaches, pitted and sliced
4 slices bacon, fully cooked
Fresh mozzarella, thinly sliced (as much as you like)
French baguette, sliced crosswise into 5″ sections OR ciabatta rolls (I would not recommend sliced breads)
Directions:
Preheat the panini grill to medium-high heat (375°F). (Edit: I don’t have a panini grill. Instead, I use a big round frying pan and a small square cast iron skillet to put on top and smoosh the sandwich. You can also do this with a George Foreman-type grill, or buy a heavy panini press at a kitchen store to use with your normal pans. Or, you know, eat it un-smooshed.)
For each sandwich: Halve the bread lengthwise. In between the halves, layer on the cheese, two slices of bacon and as many peaches as will fit neatly inside the bread.
Grill 4-5 minutes until the cheese is melted and the bread is toasted. Serve immediately and enjoy!
